Gold Top
What exactly is “gold top” in Britain?
I have such explanation: “milk delivered in Britain with the most cream, sparrows were reported to peck through the colored foil tops to get to the cream”.
What does “with the most cream” mean?
Is it somewhat top quality milk?
If you have your milk delivered by the milkman, the bottles will have different coloured tops on them, whereas if you buy it from the supermarket, milk will come in plastic containers with different coloured plastic screw tops.
Gold top milk comes from the Channel Islands and has a very high fat content.
Silver top milk (the one sold with a blue cap in the supermarkets) is the ordinary full fat milk.
Red top milk (the one sold with a green cap in the supermarket) is the semi-skimmed milk, which has half the fat content and is the popular healthier option.
Blue top milk (the one sold with a red top in the supermarkets) is skimmed milk and has very little fat left in it. It is chosen by people watching their calories and those trying to lose weight and those of us who actually really like it.
With fresh milk, the cream, which is lighter than the milk, will settle on the top and can be poured off to be used as normal cream on fruit etc. For a number of years now, British milk has been homogenized, which means that it receives an extra heat treatment in addition to pasteurisation, which suspends the fat cells in the milk to stop the cream rising to the top. So milk no longer needs to be shaken to mix the cream with the milk, as it remains mixed all the time, even when it has been standing.
Before milk was homogenised, birds would often go and peck through the tops of bottles left by the milkman on door steps in order to steal the cream.
Gold top milk is not the best quality, it just has the highest fat content and is, of course the least healthy option.
